Hispanic Wedding Traditions

I am trying to find information on hispanic traditions to incorporate into my interfaith wedding ceremony. I would like any info you may have. I was raised in the Catholic Church,but have grown away from the Church. My fince was raised United Penticostal, so we have decided to have a ceremony that does not focus on the either religion. However, I am of Hispanic ethnicity and he is not and I would like to incorporate part of my culture to honor my family. Any help you could offer would be deeply appreciated!

Did you ever get any responses or find any info out about the hispanic traditions? My mom had mentioned a lasso and coins for symbolism.
